Pinterest to Table

This seems to be the theme for all of my sunday night dinners. Pinterest to table. Tonight I decided to make the Grilled Caprese Chicken Recipe. I didn't use a grill, since we city folk :) So I did them stove top and then cooked an array of veggies on the side. Baby enjoyed it to along with some cut up cantaloupe and blueberries for dessert. I opened my new favorite drink MYX Moscato. This time I had the coconut one. YUM :)







Ingredients:
  • Boneless Skinless Chicken Breasts

  • Medium Tomato (sliced)
  • Mozzarella Cheese (sliced)
  • Basil leaves
  • Balsamic Vinegar
  • Pam (Olive Oil No-Stick Cooking Spray)


1. Cook chicken in pan 
2. Once cooked place on top sliced tomatoes and mozzarella 
3. Drizzle balsamic vinegar over them
4. Serve!

Whats in your grocery cart?


Everyone asks me what do you feed your child? And I have to say it changes every week. He is pretty picky. He also loves something one minute and hates it the next. I should know, it becomes apparent when it is allover our floor! So this morning while dad was watching baby I went grocery shopping. We were away last week and had NOTHING in the fridge. Here are a few things I picked up. What do you buy for your kiddies?

Tell it to my ankle….

I've been searching high & low for the perfect ankle strap sandal. I tried the wedge thing (didn't work), tried my normal flats (still love em) but wanted something else this summer. I found three really great ankle strap sandals in all different price ranges. (If you call now you can get the first one for under $100!). I still can't decide which one is for me or for my ankle :)

Twisted Meatloaf

No, not a new song or band, but what is for dinner! I decided to make meatloaf with a twist and use turkey and whole wheat breadcrumbs. After a full day of grocery shopping and watching the baby so hubs could ride his bike, I got a little me time on the roof and cooked and did laundry :)

Here is the recipe in case you want to make it!

Turkey Meatloaf

Servings: 4 servings  Serving Size: 1/4 • Old Points: 5 pts • Points+: 7 pts
Calories: 258.8 • Fat: 5.1 g  Protein: 37 g  Carb: 14 g  Fiber: 1.4 g



Ingredients:
  • 1/4 cup plus 2 tbsp ketchup (I use organic)
  • 2 tsp worcestershire sauce
  • 1/2 small onion, minced
  • 1 tsp olive oil
  • 1.3 lb 99% lean ground turkey
  • 1/2 cup seasoned breadcrumbs (I use 4c Whole Wheat)
  • 1 egg
  • salt to taste
  • heat oven to 350 degrees

1. Combine the worcestersire sauce and a 2 tsp of ketchup and set aside
2. Cook onions in a pan with EVOO
3. Mix turkey, egg, breadcrumbs, onions, salt and 1/4 cup of ketchup
4. Put in bread pan and cover with sauce
5. Bake at 350 for 55 minutes
6. Wait 5 minutes to cool and serve!
7. I paired it with a baked sweet potato and broccoli and some avocado for baby, his fave!
