Whats in your grocery cart?

Everyone asks me what do you feed your child? And I have to say it changes every week. He is pretty picky. He also loves something one minute and hates it the next. I should know, it becomes apparent when it is allover our floor! So this morning while dad was watching baby I went grocery shopping. We were away last week and had NOTHING in the fridge. Here are a few things I picked up. What do you buy for your kiddies?

Sunday Night Dinner

After a busy week and one lazy weekend, hubs asked me to cook tonight. Since I used to cook a lot on Sundays, I thought why not. We got up early and took baby to food shop. I went to my friend's pool with baby and then laid out on our roof during nap time. After he got up I made an amazing and very easy, brown sugar and garlic chicken dish with brown rice. Here is the recipe in case you want to try it. I saw it on pinterest and added some brown rice on the side. Baby had it too but also with some corn, cucumbers, blueberries and watermelon.

Brown Sugar and Garlic Chicken

Ingredients

    • 4 boneless & skinless chicken breasts
    • 4 tbsps brown sugar
    • 4 garlic cloves, minced
    • 3 tsps olive oil

Directions

  1. Set the oven to 500 degrees.
  2. Grease pan.
  3. Fry garlic with oil until it becomes soft.
  4. Put the garlic in brown sugar.
  5. Put the chicken in a dish for baking.
  6. Put the garlic on the chicken.
  7. Combine salt and/or pepper as you like.
  8. Bake without cover for approx 20 mins.

Baby's Faves

Last week my little guy was sick and it was really hard to get his appetite up. Hubs and I spent the whole week with him, struggling to get him to eat. Now thanks goodness he is back to normal having his faves of salmon, avocado, bananas, watermelon, turkey, cheese and pears! But we found some really great snacks that worked great during that time. I thought I would share. What are your little ones favorites?

Baby Mum Mums, loves all flavors especially apple and carrot

Go Go Squeez - loves every flavor! Yum

Happy Creamies - especially loves the yogurt ones

Cheerios! And who doesn't love em :)

Mother's Day Brunch

This year I decided for mother's day, I wanted to cook. Its really hard to find time to make meals in my house with my husband, dog and baby all wanting my attention. I usually cook on Sundays, but even then I  have been slacking. Since we were at my moms with ample babysitters and room in the kitchen, I decided I would not only devise the menu but execute it. Here is a sampling of what I made.

Cantaloupe, Mozzarella, Prosciutto salad with Basil found here

Challah French Toast Casserole (Made from a friend's recipe)

Mozzarella, Tomato and Basil Fritatta found here (Modified to use my ingrediants)

And what is Mother's day without a cocktail? I made Prosecco mimosas with blood orange pieces
